We began with protein on a plate.
Following protein through the body has revealed a larger question: how does the protein we eat contribute to the muscle we maintain and use?
The amount matters. So do the food that carries it, the meal surrounding it, and the condition of the receiving tissue. Together, they form a journey that continues beyond the last bite.
From food to living tissue
Digestion releases amino acids and small peptides from food. Absorption brings their components into the body’s metabolism. The intestine and liver use part of the supply, while the circulation distributes amino acids among tissues.
Within muscle, incorporation joins available amino acids into new proteins. Those proteins participate in the continuing work of maintenance, repair, and adaptation.
This has been the biological center of our book: the point at which materials supplied by food become part of the muscle’s working machinery.
Cellular regulation helps coordinate that work. Synthesis and breakdown together determine protein balance, while recycling returns materials to the available supply.
Each stage contributes to renewal.
The meal and the receiving muscle belong together
EpiNutrition’s interest in meal composition follows naturally from this journey. Protein is eaten within foods whose structure, preparation, and accompanying nutrients shape the conditions of digestion.
The muscle also brings its own circumstances to the encounter. Recent activity, recovery, health, and age influence the setting in which nutrients are used. Exercise can increase the incorporation of dietary amino acids into muscle protein. [1]
Understanding nutrition therefore requires attention to both the supply and the tissue receiving it.
This perspective allows for individual differences. It directs us toward the part of the journey where a difficulty arises and the changes that may help.
Renewal has a human purpose
Muscle supports the activities through which people participate in life.
Its value appears in standing, walking, carrying, reaching, and continuing familiar work. Muscle quantity contributes to those abilities, but strength can change at a different rate from lean mass. [2]
That is why our journey has continued through incorporation and retention to function. The practical purpose is to support tissue capable of doing useful work.
The prevention chapter brings this purpose into daily life: keep muscle appropriately active, supply adequate energy and protein with all nine essential amino acids, and follow strength and everyday function. Chapter 15 explains the evidence and how these priorities fit individual circumstances.
Returning to the table
The science gives us a framework for everyday decisions: provide adequate nourishment, consider the whole meal, connect food with appropriate activity, and choose a routine the person can sustain.
It also gives us a language for understanding nutrition. Intake, delivery, incorporation, retention, and function each describe a distinct part of the process. Knowing how they connect helps us interpret advice and make informed choices.
That understanding is part of EpiNutrition’s mission to make nutrition literacy accessible to everyone.
We return to the table with a fuller appreciation of what begins there. A familiar meal contributes materials to a living body that continually renews itself.
Protein’s journey connects everyday nourishment with the muscle we use—and with our capacity to move, work, and live.
